Contacted support a bit ago, apparently there is no method to block updates beyond using "Pause" For some reason my computer had pause disabled and was forcing me to update over and over, but at supports suggestion, rerunning the latest 21H2 update via ISO on a usb drive, seemed to fix that I can now use Pause again.
